Pour pulp through strainer or sifter to seperate seeds from the juice

Place water in scaucepan over medium heat and add sugar to dissolve stir for about 3-5 minutes or until sugar has dissolved

Bring to boil, then simmer on low heat for 3-5 minutes remover from heat

Pour in passion fruit juice

Leave to cool completely

Place in freezer for 3 hours

Remover from freezer and place in food processor add egg white and blend for about 3-5 minutes

Add pulp seeds from passion fruit and blend for about 1-2 minutes continue to blend if needed make sure the mixture is smooth

Pour mixture into container and freeze for 4-5 hours

Serve with fresh passion fruit pulp
